Woo Hoo! Moe's Southwest Grill offers free kids' meals (with the purchase of an adult meal) every Tuesday evening.
Moe's has a very kid friendly atmosphere and we typically bump into neighbors while dining there.
Last night, the kids ate tacos while I enjoyed Billy Barou Nachos and my husband ate a John Coctastan Quesadilla. Delicious.

Mexican Chicken Casserole
Good Morning,
Last night I made a scrumptious Mexican Chicken Casserole for dinner although my 4-yr old son tried one bite and spit it out. I think he needs to give this meal another try.
Mexican Chicken Casserole:
2 Boneless Chicken Breasts (cooked, cooled and shredded)
1 can Cream of Chicken Soup
3/4 C. Sour Cream
1/2 tsp dried Cilantro (fresh cilantro is even better)
1/4 tsp ground cumin
1/4 tsp chili powder
1/4 tsp garlic powder
1 can diced green chiles
1/4 c. diced onions
shredded cheddar cheese
2 handfuls of tortilla chips
Spray no stick spray into casserole dish. Preheat oven to 375 degrees.
Mix soup and sour cream, spices, green chiles and onion in bowl. Add cooked, shredded chicken and mix well. Pour chicken mixture into casserole dish. Crumble tortilla chips into casserole and stir so that some of the chips are mixed in. Sprinkle top with cheddar cheese. Bake at 375 degrees for 35 minutes or until casserole is bubbly.

Spaghetti for the sleepover party
The weekend got away from me. Our son had a friend over for a sleepover on Saturday night. We played Candyland and watched Wallace and Gromit. It was lots of fun. We fed them Spaghetti and a salad.

Roast Beef, Roasted Potatoes/Carrots, Broccoli
My son announced yesterday morning that he "loves Broccoli" which I found hysterical as he had never eaten broccoli for me previously. He then proceeded to tell me that he wanted "Roast Beef (also not a regular dinner item at my house),Broccoli and Corn" for dinner.
So, this is what we had:
Roast Beef
Roasted New Potatoes with a few carrots tossed in for good measure
Corn
Steamed Broccoli
He was so excited about the broccoli as he took his 1st bite. Then he spit it out and said "I don't think that I like broccoli, Mommy". So I grabbed the Ranch dressing from the refrigerator and asked that he try dipping it. He liked this better but he only had the one bite before moving on to the other items on his plate.
I will definitely be re-testing broccoli in the near future. Now, if only my husband liked broccoli.

Ham Chops with Macaroni and Cheese
As this is my first post I am going to tell you what I fed the kids last night. I had spent the day painting my basement and was running behind on dinner preparations so I needed a quick easy dinner.
